Recipe Tips

To enhance the banana flavor, use overripe bananas with lots of brown spots; they will be sweeter and more flavorful, contributing to a moister cake.
When measuring flour, spoon it into the measuring cup and level it off with a knife instead of scooping directly with the cup, which can lead to excess flour and a denser cake.
Avoid overmixing the batter after adding the flour; mix just until combined to ensure a light, fluffy texture. Overmixing can result in a tough cake due to gluten development.

Frequently Asked Questions

What can I substitute for coconut oil in the recipe?

You can substitute coconut oil with unsalted butter or vegetable oil in equal quantities. If you want to retain a hint of coconut flavor, you might also try refined coconut oil.

How should I store the leftovers of the banana, coconut, and chocolate cake?

Store any leftover cake in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week. You can also freeze it for longer storage, up to 3 months. Just wrap it tightly in plastic wrap and foil.

What should I do if my cake doesn't rise correctly?

If your cake doesn't rise, it could be due to expired baking powder or incorrect measuring of the flour. Make sure your baking powder is fresh and that you measure the flour accurately, spooning it into the measuring cup and leveling it off without packing it down.
