Recipe Tips

Make sure your eggs are at room temperature before mixing; this helps incorporate air into the batter, leading to a lighter texture. If you forget, you can place the eggs in warm water for about 10 minutes.
For a more intense flavor, consider toasting the cinnamon powder lightly in a dry skillet for a few minutes before adding it to the batter. This enhances its aroma and depth, making your cake even more fragrant.
Avoid overmixing the batter once the flour is added. Mix just until combined to prevent the cake from becoming dense and tough. Stop mixing as soon as you no longer see any dry flour.

What can I substitute for Port wine in this recipe?

You can substitute Port wine with grape juice for a non-alcoholic version, or use a mixture of red grape juice and a splash of vinegar for a similar flavor profile.

How should I store the Soft Cinnamon Cake after baking?

Once the cake has cooled, you can store it in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate it for up to a week, or freeze it for up to 3 months.

What should I do if my cake doesn’t rise properly?

If your cake doesn’t rise, ensure that your baking powder is fresh, as expired leavening agents can cause a dense cake. Make sure to mix the batter well and avoid overmixing, which can affect the cake's texture.
