Recipe Tips

When separating the eggs, ensure that no yolk gets into the whites to achieve the maximum volume when whipping the egg whites. This will create a lighter, fluffier cake.
For a more pronounced lemon flavor, zest the lemon before juicing it, and include the zest in the cake batter. This enhances the aroma and gives an extra citrusy punch.
Avoid overmixing the batter after adding the potato starch, as this can lead to a dense cake. Mix just until combined; small lumps are okay.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and refreshing wine complements the fruity flavors of the cake while balancing its sweetness.

General: Riesling - A slightly sweet Riesling enhances the tropical notes from the pineapple and the acidity from the lemon juice in the cake.

Beer

Portuguese: Sagres - This pale lager is crisp and refreshing, making it a delightful match for the lightness of the summer cake.

General: Blonde Ale - A smooth blonde ale offers a mild malt sweetness that pairs well with the dessert without overpowering it.

Other Beverages

Lemonade: A refreshing homemade lemonade will enhance the lemon flavor in the cake and provide a bright, zesty contrast to its sweetness.
