Ingredients

1 lb pork meat, cut into cubes1 lb of potatoes3 cloves of garlic, peeled and crushedSalt and pepper (to taste)2 tablespoons of crushed red pepper sauce (pimenta moida)1/2 cup of white wineMushrooms to taste, chopped (optional)

Directions

  1. In casserole dish, place the potatoes cut in half, the meat cubes, and the mushrooms (optional).
  2. Season with a little salt and pepper and add the cloves of garlic.
  3. Add the 2 tablespoons of the crushed red pepper sauce and the white wine and mix well.
  4. Cover with aluminum foil and bake in a preheated oven at 180°C or 350°F for about 1 hour and 30 munites, until the meat and potatoes are tender (remove the foil in the last 20 minutes).

I'd add a small cooking onion, cut in wedges & I'd add a little olive oil (about a tablespoon) to the pimento paste-white wine mixture: It will help to coat the pork, potatoes, garlic & onions AND, it will keep everything from sticking to the pan.
