Tips for Success
• When preparing the potatoes, make sure to cut them into uniform pieces to ensure even cooking. Aim for 1-inch chunks, as smaller pieces may cook too quickly and become mushy.
• To enhance the flavors, marinate the cod and shrimp in olive oil, minced garlic, salt, and chili pepper for at least 30 minutes before baking. This will infuse the seafood with additional flavor.
• Avoid overcooking the shrimp and cod. Bake just until the shrimp turns pink and the cod flakes easily with a fork, typically around 12-15 minutes at 400°F (200°C). Overcooking can lead to a rubbery texture.
Frequently Asked Questions
Can I substitute cod with another type of fish?
Yes, you can substitute cod with other firm white fish such as haddock, pollock, or tilapia. Just keep in mind that cooking times may vary depending on the thickness of the fish.
How should I store leftovers from this dish?
To store leftovers, let the dish cool completely, then transfer it to an airtight container. It can be refrigerated for up to 3 days. To reheat, place in the oven at a low temperature until warmed through.
What can I do if my potatoes aren't tender after baking for 30 minutes?
If your potatoes are not tender after 30 minutes, you can pre-cook them briefly in boiling water for 5-10 minutes before adding them to the dish, or simply increase the baking time by an additional 10-15 minutes, checking for doneness.
