Tips for Success

When preparing the potatoes, make sure to cut them into uniform pieces to ensure even cooking. Aim for 1-inch chunks, as smaller pieces may cook too quickly and become mushy.

To enhance the flavors, marinate the cod and shrimp in olive oil, minced garlic, salt, and chili pepper for at least 30 minutes before baking. This will infuse the seafood with additional flavor.

Avoid overcooking the shrimp and cod. Bake just until the shrimp turns pink and the cod flakes easily with a fork, typically around 12-15 minutes at 400°F (200°C). Overcooking can lead to a rubbery texture.

Frequently Asked Questions

Can I substitute cod with another type of fish?

Yes, you can substitute cod with other firm white fish such as haddock, pollock, or tilapia. Just keep in mind that cooking times may vary depending on the thickness of the fish.

How should I store leftovers from this dish?

To store leftovers, let the dish cool completely, then transfer it to an airtight container. It can be refrigerated for up to 3 days. To reheat, place in the oven at a low temperature until warmed through.

What can I do if my potatoes aren't tender after baking for 30 minutes?

If your potatoes are not tender after 30 minutes, you can pre-cook them briefly in boiling water for 5-10 minutes before adding them to the dish, or simply increase the baking time by an additional 10-15 minutes, checking for doneness.

Recommended Drink Pairings

  • Sauvignon Blanc: This white wine's crisp acidity complements the seafood and balances the richness of the cod and shrimp.
  • Chardonnay: A lightly oaked Chardonnay pairs well with the baked flavors, enhancing the dish's creaminess.
  • Sparkling Water: The effervescence cleanses the palate, making it a refreshing choice alongside the meal.
  • Ginger Ale: The sweetness and spice of ginger ale can enhance the flavors of the dish while providing a refreshing contrast.
  • Green Tea: This tea's subtle earthiness and lightness complement the dish without overpowering it.
  • Light Lager: A crisp, light lager provides a refreshing contrast to the savory elements of the baked cod and shrimp.

Can't wait to try this with some fresh firm white fish from our local harbour. I have the perfect olive oil to use and our potatoes and shellfish are first class. (Aberdeen, Scotland.)
