Chef's Tips & Variations

  • When using the whole orange in the cake, make sure to thoroughly wash it and remove any seeds before blending or processing it. This ensures a smoother texture and prevents bitterness from the seeds.
  • For a more intense orange flavor in the cake, consider adding the zest of the whole orange along with the juice. This enhances the aroma and adds a delightful zing to the cake.
  • Avoid overmixing the batter after adding the flour. Mix just until the ingredients are combined to prevent a dense cake texture. A few lumps are acceptable; they will bake out during cooking.

Frequently Asked Questions

Can I substitute the whole orange with orange puree or another type of fruit?

Yes, you can substitute the whole orange with orange puree for a more intense flavor, but ensure it's about the same volume as the whole orange. Alternatively, you can use another fruit such as a lemon or tangerine for different flavor profiles, adjusting the sugar accordingly if the fruit is less sweet.

How should I store the Tangy Orange Cake and its curd topping?

Store the Tangy Orange Cake in an airtight container at room temperature for up to 3 days. If it’s hot or humid, refrigerate it to keep it fresh for up to a week. The orange curd can be kept in a sealed container in the refrigerator for up to two weeks.

What can I do if the cake doesn't rise properly?

If the cake doesn't rise, check that your baking powder is fresh and potent. Also, ensure that you incorporated the ingredients thoroughly and didn't overmix the batter. Lastly, make sure to bake at the correct temperature, as too low can prevent proper rising.

Hi PR,
In the instructions; remove the peel from the orange, cut it into pieces… about what size pieces? And also, can I put some grated peel into the batter?

Hi Dolores, smaller pieces would probably be better for the blender.
