Frequently Asked Questions

What can I use as a substitute for eggs in this recipe?

You can substitute each egg with 1/4 cup of unsweetened applesauce, 1/4 cup of yogurt, or 1 tablespoon of ground flaxseed mixed with 2.5 tablespoons of water. These alternatives will help bind the ingredients and retain moisture in the cake.

How should I store the leftover double chocolate cake?

Store any leftover cake in an airtight container at room temperature for up to three days or refrigerate it for up to a week. If you want to keep it longer, you can freeze the cake by wrapping it tightly in plastic wrap and then aluminum foil, which will keep it fresh for up to three months.

My cake took longer to bake than the recipe states. What could have caused this?

Baking times can vary based on a variety of factors, including your oven calibration, the size and material of the cake pan, or the humidity in your kitchen. To ensure your cake is done, always check for doneness by inserting a toothpick into the center; it should come out clean or with a few moist crumbs.

Recommended Drink Pairings

Wine

Portuguese: Porto - The rich, sweet flavors of this fortified wine complement the intense chocolate of the cake beautifully.

General: Ruby Red Wine - A fruity and slightly tannic ruby red wine enhances the cake's chocolate profile without overwhelming it.

Beer

Portuguese: Super Bock Stout - This dark beer's roasted malt flavors mirror the chocolate notes in the cake, creating a harmonious pairing.

General: Milk Stout - The creamy sweetness of a milk stout complements the cake's richness and enhances its chocolaty goodness.

Other Beverages

Coffee: A rich espresso or dark roast coffee can cut through the sweetness of the cake while enhancing its chocolate flavors.
