Frequently Asked Questions
You can substitute each egg with 1/4 cup of unsweetened applesauce, 1/4 cup of yogurt, or 1 tablespoon of ground flaxseed mixed with 2.5 tablespoons of water. These alternatives will help bind the ingredients and retain moisture in the cake.
Store any leftover cake in an airtight container at room temperature for up to three days or refrigerate it for up to a week. If you want to keep it longer, you can freeze the cake by wrapping it tightly in plastic wrap and then aluminum foil, which will keep it fresh for up to three months.
Baking times can vary based on a variety of factors, including your oven calibration, the size and material of the cake pan, or the humidity in your kitchen. To ensure your cake is done, always check for doneness by inserting a toothpick into the center; it should come out clean or with a few moist crumbs.
