Recipe Tips

Ensure that your egg whites are at room temperature before whipping them. This will help achieve maximum volume and create a lighter cake texture.
When mixing the ground almonds into the batter, fold gently to avoid deflating the whipped egg whites. Overmixing can lead to a dense cake.
For added flavor, consider incorporating a teaspoon of vanilla extract or a pinch of almond extract into the cake batter. This can enhance the overall taste without overwhelming the almond flavor.

Frequently Asked Questions

Can I substitute ground almonds with almond flour or another type of flour?

Yes, you can substitute ground almonds with almond flour in this recipe. Almond flour will yield a similar texture and flavor. However, avoid using regular flour as it will alter the cake's texture significantly.

How should I store the almond cake to keep it fresh?

To keep the almond cake fresh, store it in an airtight container at room temperature for up to 2-3 days. For longer storage, refrigerate it for up to a week. You can also freeze the cake for up to 3 months; just make sure to wrap it tightly in plastic wrap.

My cake came out dry; what could have gone wrong?

If your cake turned out dry, it may have been baked for too long or at a temperature that was too high. Always check for doneness around the 20-minute mark, and use a toothpick to check if it comes out clean from the center. Additionally, ensure that measurements are accurate, especially with flour and sugar.
