With all your ingredients and equipment gathered, you are ready to get started!

Directions

  1. Grease a cake form with butter and sprinkle with plenty of grated coconut.
  2. Beat the butter with the sugar until it turns into a cream and then add the eggs  one by one, beating well between each addition.
  3. Stir the yogurt together with the flour mixed with baking soda and salt and mix well.
  4. Cut the pineapple slices into small pieces and add them to the dough, as well as the 1 cup of grated coconut.
  5. Put the preparation in the cake form and bake in a oven for about 40 minutes at 180°C or 350°F or until a light golden brown.

Recipe Tips

Make sure to beat the eggs and sugar until the mixture is light and fluffy; this will incorporate air and help the cake rise beautifully. Consider using an electric mixer on medium speed for about 3-5 minutes.
Before adding the pineapple slices to the batter, consider dicing them into smaller pieces for more even distribution and to prevent any soggy spots in the cake. You can also lightly coat the pineapple pieces in flour to help them stay suspended in the batter during baking.
Avoid overmixing the batter once you add the dry ingredients. Gently fold the flour and grated coconut into the wet mixture until just combined to maintain a tender crumb. Overmixing can lead to a dense cake.

Frequently Asked Questions

Can I substitute the grated coconut with something else?

Yes, you can substitute grated coconut with almond meal or finely chopped nuts for a different flavor and texture. However, if you want to maintain the coconut flavor, consider using coconut flour or desiccated coconut.

How should I store the coconut and pineapple cake after baking?

Store the cake in an airtight container at room temperature for up to 3 days. For longer storage, it can be refrigerated for up to a week or frozen for up to 3 months. Make sure to wrap it tightly in plastic wrap before freezing.

What can I do if my cake doesn't rise properly?

If your cake doesn't rise, ensure that your baking soda is fresh and that you mixed it well with the flour beforehand. Also, make sure to beat the butter and sugar until creamy and aerated, and avoid opening the oven door while the cake is baking as this can cause it to collapse.
