Recipe Tips

Ensure your eggs are at room temperature before mixing; this helps them incorporate better into the batter, resulting in a lighter cake.
When measuring honey, lightly greasing the measuring cup with a little oil can help the honey pour out smoothly and ensure you get the full amount needed for the recipe.
Avoid overmixing the batter once you add the flour; mixing just until the ingredients are combined will help maintain the cake's moisture and prevent it from becoming dense.

Frequently Asked Questions

Can I substitute the honey with another sweetener?

Yes, you can substitute honey with an equal amount of maple syrup or agave nectar. However, keep in mind that this may alter the final flavor slightly.

How should I store the Tea and Honey Cake after baking?

To store the cake, let it cool completely, then wrap it in plastic wrap or aluminum foil and keep it at room temperature for up to 3 days. For longer storage, you can refrigerate it for up to a week or freeze it for up to 3 months.

My cake didn't rise properly. What could have gone wrong?

The most common reasons for a cake not rising are expired baking powder or not properly whisking the egg whites stiff enough. Make sure your ingredients are fresh and that the egg whites are well aerated before gently folding them into the batter.
