Recipe Tips

To ensure your avocado is perfectly ripe, gently press on the skin; it should yield slightly. If it's too firm, let it ripen at room temperature for a few days before using it in the cake.
When measuring flour, use the spoon and level method: spoon the flour into your measuring cup and then level it off with a knife. This prevents packing the flour, which can lead to a dense cake.
Avoid overmixing the batter once you add the flour, as this can develop the gluten and result in a tougher cake. Mix just until the ingredients are combined for a lighter texture.

Frequently Asked Questions

Can I substitute the avocado for another ingredient?

Yes, if you're looking to replace the avocado, you can use unsweetened applesauce or Greek yogurt as a substitute to maintain moisture in the cake, though it may alter the flavor slightly.

How should I store the leftover avocado and lemon cake?

Store the leftover cake in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate it for up to a week or freeze it for up to 3 months. Be sure to wrap it tightly in plastic wrap before freezing.

What can I do if my cake doesn't rise properly?

If your cake doesn't rise, ensure that your baking powder is fresh, as expired baking powder can hinder the leavening process. Also, be careful not to overmix when incorporating the egg whites to keep the batter light and airy.
