Recipe Tips

Ensure that your butter is not too hot when mixing it with the yogurt and eggs; otherwise, it can cook the eggs and create a lumpy batter. Allow the butter to cool slightly before adding it.
For a more intense almond flavor, consider toasting the sliced almonds before adding them to the batter. This will enhance their nutty flavor and add a nice crunch to the cake.
Avoid overmixing the batter once you add the dry ingredients. Overmixing can lead to a dense cake. Mix just until the dry ingredients are incorporated, and a few lumps are okay.

Frequently Asked Questions

Can I substitute the plain yogurt for another ingredient?

Yes, you can substitute plain yogurt with sour cream, buttermilk, or a non-dairy yogurt alternative. Each will slightly change the flavor and texture, but will still yield a delicious cake.

How should I store the leftover almond and apple cake?

Store any leftover cake in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to a week. You can also freeze slices of the cake for up to 3 months; just wrap them tightly in plastic wrap and aluminum foil.

What should I do if my cake sinks in the middle after baking?

If your cake sinks in the middle, this could be due to overmixing the batter, using expired baking powder or baking soda, or underbaking. Be sure to mix just until combined, check the expiration dates of your leavening agents, and ensure the cake is cooked through; the center should spring back when lightly touched.

Recommended Drink Pairings

Wine

Portuguese: Alvarinho - This aromatic white wine offers bright acidity and notes of stone fruits that complement the sweetness of the apples in the cake.

General: Riesling - A slightly off-dry Riesling provides a balance of sweetness and acidity, enhancing the flavors of the cake without overwhelming it.

Beer

Portuguese: Super Bock - This classic Portuguese lager has a crisp finish that pairs well with the moist texture of the cake.

General: Pale Ale - A light Pale Ale with citrus notes can complement the almond and apple flavors while providing a refreshing contrast.

Other Beverages

Coffee: A smooth cup of coffee enhances the cake's richness, with its bitterness balancing the sweetness of the dessert.
