Ingredients

3 medium raw carrots peeled (approx 300g or 10.6 oz)5 large eggs2 cups granulated sugar (400g or 14.1 oz)2 cups all-purpose flour (240g or 8.5 oz)2 teaspoons baking powder (8g or 0.28 oz)1/2 cup milk (125 ml or 4.2 fl oz)1/2 cup vegetable oil (125 ml or 4.2 fl oz)Grated coconut to taste

Directions

  1. Place the peeled raw carrots, eggs, milk, sugar, and vegetable oil into a blender and process for two minutes until the mixture is completely smooth.
  2. Sift the all-purpose flour and baking powder together into a separate mixing bowl.
  3. Pour the blended wet ingredients into the dry mixture and gently fold everything together with a whisk until just combined.
  4. Transfer the cake batter into a greased and floured regular cake pan that does not have a center hole.
  5. Bake in a preheated oven at 180°C (350°F) for forty-five minutes or until a toothpick inserted in the center emerges completely clean.
  6. Remove the pan from the oven and allow the cake to cool slightly before gently removing it from the mold.
  7. Sprinkle the top generously with grated coconut to finish the presentation.
