3 large eggs (3 ovos)200 g / 7 oz finely grated carrotsJuice and zest of 1 large orange1 ½ cups / 150 g fine oat flakes or oat flourâ…“ cup / 80 ml honey, agave, or blended dates¼ cup / 60 ml olive oil or coconut oil1 tbsp baking powder1 tsp cinnamon1 pinch of salt½ tsp vanilla extract¼ cup / 35 g chopped almonds

Directions
- Preheat your oven to 180°C (350°F) and grease your baking pan.
- Whisk the eggs with the honey or preferred sweetener until the mixture is creamy and pale.
- Stir in the olive oil, orange juice, orange zest, and vanilla extract until well combined.
- Fold in the finely grated carrots.
- Gently mix in the oat flour, cinnamon, salt, and baking powder until the batter is smooth.
- Fold in the chopped almonds.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack.
