Ingredients

3 large eggs (3 ovos)200 g / 7 oz finely grated carrotsJuice and zest of 1 large orange1 ½ cups / 150 g fine oat flakes or oat flourâ…“ cup / 80 ml honey, agave, or blended dates¼ cup / 60 ml olive oil or coconut oil1 tbsp baking powder1 tsp cinnamon1 pinch of salt½ tsp vanilla extract¼ cup / 35 g chopped almonds

Directions

  1. Preheat your oven to 180°C (350°F) and grease your baking pan.
  2. Whisk the eggs with the honey or preferred sweetener until the mixture is creamy and pale.
  3. Stir in the olive oil, orange juice, orange zest, and vanilla extract until well combined.
  4. Fold in the finely grated carrots.
  5. Gently mix in the oat flour, cinnamon, salt, and baking powder until the batter is smooth.
  6. Fold in the chopped almonds.
  7. Pour the batter into the prepared pan and smooth the top with a spatula.
  8. Bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack.
