Directions

  1. Preheat your oven to 350°F (180°C).
  2. Place the sliced or diced apples in a bowl.
  3. Toss them with the cinnamon, lemon juice, and lemon zest and let them sit for a few hours.
  4. Grease a springform pan with parchment paper, then dust it with flour.
  5. In a separate bowl, combine the cornstarch, oat flour, baking powder, and a pinch of cinnamon.
  6. In another bowl, whisk together the eggs, coconut sugar, and melted coconut oil until well combined.
  7. To assemble the cake, alternate layers in your prepared pan: start with a layer of apple slices, then follow with a layer of the dry ingredient mixture.
  8. Repeat this process until the pan is full.
  9. Pour the liquid mixture (eggs, sugar, oil) over the top.
  10. Sprinkle with the chopped walnuts.
  11. Bake for 40 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  12. Once baked, brush the top with apple jam (optional).
  13. Let the cake cool completely before unmolding.
