Directions

  1. Preheat the oven to 350°F (180°C).
  2. Empty the yogurt into a mixing bowl.
  3. Mix the lemon zest with the sugar and add to the yogurt.
  4. Add the eggs and beat for 2 to 3 minutes until light and fluffy.
  5. Add the lemon juice and mix until smooth.
  6. Sift the flour and baking powder together and gently fold into the batter to avoid lumps.
  7. Add the olive oil and mix just until combined.
  8. Stir in the diced apple, but don’t overmix it, just distribute the apple evenly.
  9. Pour the batter into the greased and floured cake pan or one lined with parchment paper.
  10. Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  11. Let it cool in the pan for 10 minutes, then remove and let cool completely on a wire rack.
