Ingredients
1 plain yogurt (125g or ½ cup)4 eggs1/2 cup of olive oil1 1/4 cups of sugar (250g)3 cups of all-purpose flour (375g)Zest and juice of 1 lemon1 apple, peeled and finely diced2 teaspoons baking powder
Directions
- Preheat the oven to 350°F (180°C).
- Empty the yogurt into a mixing bowl.
- Mix the lemon zest with the sugar and add to the yogurt.
- Add the eggs and beat for 2 to 3 minutes until light and fluffy.
- Add the lemon juice and mix until smooth.
- Sift the flour and baking powder together and gently fold into the batter to avoid lumps.
- Add the olive oil and mix just until combined.
- Stir in the diced apple, but don’t overmix it, just distribute the apple evenly.
- Pour the batter into the greased and floured cake pan or one lined with parchment paper.
- Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan for 10 minutes, then remove and let cool completely on a wire rack.
