Recipe Tips

To enhance the caramel flavor in your cake, consider adding a pinch of sea salt to the caramel mixture. This will balance the sweetness and bring out the rich flavors of the walnuts and brown sugar.
When greasing the pan, use the butter to also dust the pan with a light layer of flour after greasing. This will prevent the cake from sticking and ensure an easy release after baking.
Be cautious not to overmix the batter once you add the dry ingredients. Overmixing can lead to a dense cake texture; mix just until the ingredients are combined for a light and fluffy result.

Frequently Asked Questions

Can I substitute Greek yogurt with another ingredient?

Yes, you can substitute Greek yogurt with sour cream, buttermilk, or a non-dairy yogurt alternative if you need a dairy-free option. Ensure the consistency is similar to avoid affecting the cake's texture.

How should I store the leftover cake?

Store any leftover cake in an airtight container at room temperature for up to 3 days. For longer storage, you can refrigerate it for up to a week, or freeze it for up to 3 months. Be sure to wrap it tightly to prevent freezer burn.

What should I do if my cake sinks in the middle?

If your cake sinks, it could be due to underbaking or too much liquid in the batter. Ensure you measure ingredients accurately, especially liquids. Also, check that your oven is properly calibrated and that you're not opening the oven door too frequently while baking.

Recommended Drink Pairings

Wine

Portuguese: Madeira Wine - The rich, nutty flavors of Madeira complement the walnuts and caramel beautifully.

General: Late Bottled Vintage Port - This sweet, full-bodied wine enhances the caramel notes and pairs well with the cake's overall richness.

Beer

Portuguese: Super Bock - This lager's crispness and mild bitterness balance the sweetness of the cake.

General: Brown Ale - The malty sweetness and caramel notes in a brown ale work harmoniously with the flavors of the walnut and caramel cake.

Other Beverages

Espresso: A strong, rich espresso cuts through the sweetness of the cake and enhances its nutty flavors.
