Ingredients

4 medium raw carrots, sliced (approx. 340g / 12oz)4 large eggs1 cup vegetable oil (235ml / 8fl oz)2 cups all-purpose flour (250g / 8.8oz)1 cup granulated sugar (200g / 7oz)2 tablespoons baking powder (24g / 0.8oz)2 tablespoons unsweetened cocoa powder (15g / 0.5oz)

Directions

  1. Preheat the oven to 180°C (350°F).
  2. Cut the carrots into thin pieces and blend them with the eggs and the oil until completely smooth.
  3. In a separate bowl, sift the flour, baking powder, and sugar, and mix well.
  4. Gradually add the blended carrot mixture to the dry ingredients, stirring until a smooth batter forms.
  5. Grease a baking pan with butter and flour, then pour in half of the batter.
  6. Mix the cocoa powder into the remaining batter until fully combined.
  7. Pour the chocolate batter randomly over the carrot batter.
  8. Use a knife or spatula to gently swirl the chocolate into the carrot mixture, creating a marbled effect.
  9. Bake for about 35 minutes, or until a toothpick inserted into the center comes out clean.
