Recipe Tips

When mixing the eggs and sugar, beat them until the mixture is pale and fluffy, which typically takes about 3-4 minutes. This will help incorporate air into the tart, giving it a light texture.
For a more intense vanilla flavor, consider using vanilla bean paste instead of vanilla extract, or adding the seeds from a vanilla bean along with the extract for extra richness.
Avoid overmixing the yogurt and cornstarch mixture once added to the eggs and sugar. Overmixing can lead to a dense texture in the final tart. Mix just until combined for the best results.

Frequently Asked Questions

Can I substitute Greek yogurt with another type of yogurt?

Yes, you can substitute Greek yogurt with plain natural yogurt, but for the best texture and flavor, it’s recommended to use full-fat yogurt. You can also try using dairy-free yogurts, like coconut or almond yogurt, though the consistency may vary.

How should I store leftover tart?

Leftover yogurt and vanilla tart should be stored in an airtight container in the refrigerator. It can keep well for up to 3-4 days. If you need to store it longer, consider freezing it, but be aware that the texture may change slightly upon thawing.

What should I do if my tart doesn't rise or has a dense texture?

If your tart doesn't rise, it may be due to under-beaten egg whites or not folding them in gently enough. Ensure the egg whites reach stiff peaks and are carefully folded into the mixture. Additionally, check that your baking powder is fresh, as expired leavening agents can affect the texture.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and refreshing wine complements the tartness of yogurt while enhancing the dessert's creaminess.

General: Riesling - A slightly sweet Riesling balances the tangy yogurt with its fruity notes, making it an excellent match for the dessert.

Beer

Portuguese: Super Bock - This light lager offers a crisp finish that won't overpower the delicate flavors of the tart.

General: Lager - A classic lager provides a clean and refreshing taste that complements the creamy texture of the dessert.

Other Beverages

Vanilla Latte: The smooth coffee combined with vanilla enhances the dessert's flavor profile, creating a harmonious pairing.
