Ingredients

Cake:2 cups all-purpose flour (unsifted, no leavening)1 cup unsweetened cocoa powder1 teaspoon baking powder1 teaspoon salt1 ½ teaspoons baking soda1 3/4 cups granulated sugar1/2 cup vegetable oil1 teaspoon vanilla extract2 eggs1 cup plain natural yogurt (unsweetened, full-fat if possible)1 cup hot waterFilling & Frosting:7 oz dark or milk chocolate (your choice)3/4 cup heavy creamMini chocolate eggs or any other decorations of your choice

Directions

  1. Preheat your oven to 350°F (180°C).
  2. Grease a 9-inch (23 cm) round cake pan with non-stick spray or the traditional way: with butter and dusted with cocoa powder.
  3. In a large mixing bowl, whisk together all dry ingredients: flour, cocoa powder, baking powder, salt, baking soda, and sugar.
  4. In a separate bowl, combine the oil, yogurt, eggs, and vanilla extract.
  5. Pour the wet mixture into the dry ingredients and mix well (by hand or using a stand mixer).
  6. Gradually add the hot water while mixing. Once fully incorporated, beat the batter for 1 to 2 more minutes – this step is important for texture.
  7. Pour the batter into the prepared pan and bake for about 50 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool slightly in the pan, then remove and let cool completely on a wire rack before filling or frosting.
  9. Heat the cream in a small saucepan until it just begins to simmer.
  10. Remove from heat and add the chopped chocolate. Stir until fully melted and smooth.
  11. Let it cool slightly to thicken to a spreadable consistency.
  12. Slice the cooled cake in half horizontally. Pour some of the ganache over the bottom layer, spread it evenly, then place the top half of the cake on top.
  13. Pour the remaining ganache over the cake and smooth it out.
  14. Decorate with chocolate eggs or any toppings you like.
