Ingredients
Cake:2 cups all-purpose flour (unsifted, no leavening)1 cup unsweetened cocoa powder1 teaspoon baking powder1 teaspoon salt1 ½ teaspoons baking soda1 3/4 cups granulated sugar1/2 cup vegetable oil1 teaspoon vanilla extract2 eggs1 cup plain natural yogurt (unsweetened, full-fat if possible)1 cup hot waterFilling & Frosting:7 oz dark or milk chocolate (your choice)3/4 cup heavy creamMini chocolate eggs or any other decorations of your choice
Directions
- Preheat your oven to 350°F (180°C).
- Grease a 9-inch (23 cm) round cake pan with non-stick spray or the traditional way: with butter and dusted with cocoa powder.
- In a large mixing bowl, whisk together all dry ingredients: flour, cocoa powder, baking powder, salt, baking soda, and sugar.
- In a separate bowl, combine the oil, yogurt, eggs, and vanilla extract.
- Pour the wet mixture into the dry ingredients and mix well (by hand or using a stand mixer).
- Gradually add the hot water while mixing. Once fully incorporated, beat the batter for 1 to 2 more minutes – this step is important for texture.
- Pour the batter into the prepared pan and bake for about 50 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool slightly in the pan, then remove and let cool completely on a wire rack before filling or frosting.
- Heat the cream in a small saucepan until it just begins to simmer.
- Remove from heat and add the chopped chocolate. Stir until fully melted and smooth.
- Let it cool slightly to thicken to a spreadable consistency.
- Slice the cooled cake in half horizontally. Pour some of the ganache over the bottom layer, spread it evenly, then place the top half of the cake on top.
- Pour the remaining ganache over the cake and smooth it out.
- Decorate with chocolate eggs or any toppings you like.
