Ingredients

1 package of seafood mix 5.3 oz (150g) shrimp meat 10.5 oz (300g) fresh tomatoes (or crushed tomatoes) 7 oz (200g) Carolino rice (or another short-grain rice) 2 1/2 cups (620ml) seafood cooking broth Olive oil (as needed) 1/2 green bell pepper 1 onion 3 garlic cloves Salt (to taste) Chili flakes (to taste) Fresh coriander (for garnish)

Directions

  1. Bring a pot of salted water to a boil. Cook the seafood mix and shrimp meat for no more than 2–3 minutes. Drain and reserve the cooking broth.
  2. In a pan, sauté the onion and garlic in olive oil for about 5 minutes. Add the chopped tomatoes and cook for another 5 minutes.
  3. Add the rice, sliced bell pepper, chili flakes, and the reserved seafood broth. Cook over medium heat for about 8 minutes.
  4. Stir in the seafood mix, mix well with the sauce, and let it cook for another 2 minutes or until the rice reaches the desired texture.
  5. If needed, add more broth and adjust the seasoning.
  6. Serve immediately, garnished with fresh chopped coriander.
