4 large eggs1 cup (200g) granulated sugar1 cup (125g) all-purpose flour1 teaspoon (4g) baking powder1/8 teaspoon (0.75g) fine salt1 can (20 oz / 567g) pineapple rings in syrup1/4 cup (60ml) pineapple syrup (from the can)1/4 cup (60ml) vegetable oil8 crystallized cherries (one for each pineapple ring)3 tablespoons (22g) cocoa powder

Directions

  1. Preheat your oven to 350°F (180°C) to get things nice and hot.
  2. Beat the eggs with the granulated sugar in a mixing bowl until perfectly combined and wonderfully airy.
  3. Gradually mix in the all-purpose flour, baking powder, vegetable oil, and fine salt to achieve a light, fluffy batter full of bubbles.
  4. Pour in the sweet pineapple syrup and mix vigorously until flawlessly smooth.
  5. Divide your gorgeous batter equally into two separate bowls.
  6. Fold the rich cocoa powder into one portion of the batter until completely combined and intensely chocolatey.
  7. Grease a bundt or round cake pan generously with butter and dust it lightly with flour to prevent sticking.
