Moist, Quick and Delicious Carrot Cake Recipe
Moist, quick and delicious carrot cake recipe (receita de bolo húmido de cenoura), a rich cake made with carrot puree, and often dusted with powdered sugar.
Ingredients
1.1 lbs (500 grams) peeled carrots5 eggs1 cup + 2 tablespoons (230 grams) sugar6 tablespoons all-purpose flour2 cinnamon sticks1 teaspoon lemon zest2 teaspoons lemon juice1 piece of lemon peelPinch of salt
Directions
- Peel the carrots and boil them in water with a pinch of salt, the cinnamon sticks, and the lemon peel.
- Once cooked, remove the water, cinnamon sticks, and lemon peel.
- Puree the carrots using a blender or food processor and let it cool.
- In a separate bowl, beat the eggs with the sugar.
- Then, add the lemon zest and lemon juice, mix, and gradually add the flour.
- Finally, add the carrot puree and mix everything well.
- Pour the batter into a buttered and floured baking pan.
- Bake at 350°F (175°C) for about 50 minutes.
- When testing with a toothpick, it's normal for it to come out slightly moist, as this is a moist cake.
- Decorate with powdered sugar.
