1 puff pastry base (23 cm / 9 inches)280 grams (10 ounces) small can of white beans350 grams (1.75 cups) sugar80 grams (2/3 cup) flour80 grams (5.6 tablespoons) margarine5 eggs100 grams (1 cup) shredded coconut15 grams (1 tablespoon) sugar for sprinkling

Directions

  1. Preheat the oven to 350°F (180°C).
  2. Roll out the puff pastry and place it in a tart pan, pricking the base with a fork and set aside.
  3. Drain and rinse the white beans from the can.
  4. Drain again and puree the beans.
  5. In a bowl, mix the bean puree with all the other ingredients.
  6. Beat very well until the mixture is completely homogeneous.
  7. Pour the mixture over the tart base, sprinkle with sugar, and bake for about 35 minutes or until golden.
