Moist Carrot Cake (Bolo de Cenoura) Recipe

Moist carrot cake recipe (receita de bolo de cenoura), a cake made with carrots, eggs, sugar, flour and oil.

Ingredients

4 carrots (raw, peeled, and sliced)3 eggs2 cups of sugar3 cups of flour1 cup of oil1 teaspoon of baking powder

Directions

  1. Preheat the oven to 350°F or 180°C.
  2. In a blender, place the carrots, eggs, and oil and blend everything well.
  3. Pour the mixture into a bowl, add the sugar, and mix well with a whisk.
  4. Add the flour and baking powder and beat everything until you get a homogeneous mixture.
  5. Pour the batter into a greased and floured pan and bake for 45 minutes.
  6. Perform the toothpick test, once it comes out clean, remove the cake from the oven.
  7. Let it cool slightly and then unmold.
