Directions

  1. Place the eggs in a heatproof bowl over a pot of simmering water (double boiler) and add the sugar and honey.
  2. Beat with a mixer for about 10 minutes, until you get a white and fluffy mixture.
  3. Gradually sift in the flour three times, folding it in with circular motions, from top to bottom, using a spatula.
  4. Grease and flour a baking pan and pour the prepared mixture into it.
  5. Bake in a preheated oven at 175°C (about 350°F) for approximately 30 minutes.

Recipe Tips

Ensure that your eggs are at room temperature before mixing them into the batter. This helps create a better emulsion, resulting in a lighter and fluffier sponge cake.
When measuring your flour, use the spoon-and-level method to avoid packing the flour into the measuring cup. Packing can lead to using too much flour, resulting in a denser cake.
Avoid over-mixing the batter once the flour is added. Over-mixing can develop gluten in the flour, making the cake tough instead of light and airy. Mix just until the ingredients are combined.

Frequently Asked Questions

Can I substitute the honey for another sweetener?

Yes, you can substitute honey with maple syrup or agave nectar for a different flavor. However, keep in mind that these alternatives may alter the overall texture and sweetness of the cake.

How should I store leftover honey sponge cake?

Store the leftover honey sponge cake in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week. If you want to keep it longer, you can freeze it for up to 3 months.

My sponge cake didn't rise, what went wrong?

If your sponge cake didn't rise, it could be due to not beating the eggs and sugar mixture long enough, not folding in the flour gently, or overmixing the batter. Ensure you incorporate air into the batter by beating sufficiently and folding carefully.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and slightly effervescent wine complements the sweetness of the honey sponge cake beautifully.

General: Moscato - The fruity and floral notes of Moscato harmonize well with the cake's honey flavor, enhancing its overall sweetness.

Beer

Portuguese: Sagres - This pale lager has a light and crisp profile that refreshes the palate between bites of the sweet cake.

General: Wheat Beer - A wheat beer's light, fruity character complements the fluffy texture of the sponge cake without overpowering it.

Other Beverages

Coffee: A mild, lightly roasted coffee enhances the cake's sweetness while providing a pleasant contrast to its texture.
