4 eggs200g (1 cup) sugar300g (2 1/2 cups) self-rising flour1 tsp (4g) baking powder50g (3 1/2 tablespoons) butter, melted100ml (6 1/2 tablespoons) milk4 apples

Equipment:

12-inch round non-stick cake panMixing bowlsWhisk or electric mixerToothpick

Directions

  1. Preheat the oven to 300°F (150°C).
  2. Grease a non-stick cake pan with butter and sprinkle the bottom and sides with sugar.
  3. Peel the apples, slice them, and line the bottom of the pan with a layer of the slices.
  4. Chop and save the remaining apple slices to mix directly into the batter later.
  5. Beat the eggs with the sugar until pale and fluffy, then mix in the melted butter followed by the milk.
  6. Gently fold the flour, baking powder, and the remaining chopped apples into the wet ingredients and mix thoroughly.
  7. Pour the batter over the apple slices in the prepared pan, spreading it into an even layer.
  8. Bake for about 40 minutes or until the top is golden.
