1/2 lb salt cod, cooked and shredded3 cans of chickpeas, drained and rinsed1 red onion, thinly sliced1 red bell pepper, seeded and sliced1/2 cup chopped fresh parsley1/2 cup olive oil5 tbsp red wine vinegarSalt and pepper, to taste

Instructions

  1. Soak salt cod in cold water for at least 24 hours and change the water every 8 hours.
  2. Cook the cod in water, let it cool and then shred it with your hands, removing any skin and bones.
  3. In a large bowl, add the chickpeas, red onion, red bell pepper and the parsley.
  4. In a smaller bowl, whisk together olive oil and the red wine vinegar and season with salt and pepper to taste.
  5. Add the flaked cod to the bowl with the chickpeas. Pour the dressing over everything and toss gently to combine well.
