Ingredients
With all your ingredients and equipment gathered, you are ready to get started!
Directions
- In a large bowl, beat the cream cheese and sugar together using an electric beater until creamy.
- Gradually pour in the whipping cream, beating until the mixture is thick and stiff peaks form (do not overbeat).
- Line the sides then the bottom of a 10 inch spring form pan with the row of lady fingers.
- Fill in any gaps on the bottom with pieces of the lady fingers (do not leave spaces between the fingers).
- Spread half of the cheese mixture over the lady fingers.
- Cover the cheese with another layer of lady fingers, then pour the remaining cheese mixture on top.
- Carefully spoon the pie filling on top of the cheese mixture, covering it completely and being careful not to touch the sides.
- Refrigerate the cake for several hours or overnight before serving.
- Remove the cake from the spring form and place it on a serving dish when ready to serve.
Recipe Tips
- Ensure the cream cheese is at room temperature before mixing; this will help achieve a smoother and creamier filling without lumps.
- When layering the lady fingers, consider briefly dipping them in a mixture of milk or coffee to add moisture and flavor, but avoid soaking them too long to prevent them from becoming soggy.
- To enhance the flavor of your cheesecake, add a teaspoon of vanilla extract to the whipped cream mixture before folding it into the cream cheese mixture, giving it a richer taste.

Frequently Asked Questions
Can I use a different type of cream cheese, like low-fat or whipped cream cheese, in this recipe?
You can use low-fat cream cheese, but it may affect the texture and taste of the cheesecake. Whipped cream cheese can also be used, but it might not provide the same firmness. The key is to ensure that the cheese mixture remains thick enough to hold its shape.
How can I store leftovers of the no-bake cherry cheesecake?
Store any leftover cheesecake in an airtight container in the refrigerator for up to 3-4 days. If you plan to keep it longer, you can freeze individual slices wrapped tightly in plastic wrap and then placed in a freezer bag for up to 2 months. Thaw in the refrigerator before serving.
What can I do if my whipped cream does not form stiff peaks?
If the whipped cream isn't forming stiff peaks, it may not be cold enough, or you may have overbeaten it. Ensure the cream and mixing bowl are chilled before whipping. If it’s overbeaten, gently fold in a little more unwhipped cream to help salvage the texture.
Recommended Drink Pairings

Portuguese: Vinho Verde - This light and refreshing wine complements the sweetness of the cherry cheesecake perfectly with its bright acidity.
General: Moscato - A sweet and bubbly Moscato enhances the flavors of the cherries while balancing the richness of the cream cheese.
Beer
Portuguese: Super Bock - This light lager has a crisp finish that pairs well with the creamy texture of the cheesecake.
General: Witbier - A Belgian Witbier's citrus notes and spice can beautifully complement the flavors of cherry and cream in the dessert.
Other Beverages
Coffee: A smooth, lightly roasted coffee can provide a pleasant contrast to the sweetness of the cheesecake, enhancing the overall dessert experience.
