How should I store leftovers of Roupa Velha?

Store leftover Roupa Velha in an airtight container in the refrigerator for up to 3 days. You can also freeze it for up to a month; just thaw it overnight in the refrigerator before reheating.

What can I do if my potatoes are not cooking properly?

If your potatoes are not cooking through, ensure they are cut into uniform squares to promote even cooking. You may need to increase the boiling time slightly until they are fork-tender.
