Tips for Success

Make sure to beat the eggs and sugar together until they are light and fluffy to incorporate air into the batter, which helps the cake rise properly. This usually takes about 3-5 minutes with an electric mixer.

Avoid using cold milk or water; both should be hot as specified in the recipe. This helps dissolve the sugar and ensures a smooth batter, leading to a more tender cake texture.

When adding the grated coconut, consider toasting it lightly in a pan beforehand. This enhances the flavor of the coconut and adds a pleasant nuttiness to the cake.

Frequently Asked Questions

Can I substitute the grated coconut with something else?

Yes, if you don't have grated coconut on hand, you can substitute it with shredded coconut or even finely chopped nuts for a different texture and flavor.

How should I store the leftover cake?

To store leftover cake, wrap it tightly in plastic wrap or place it in an airtight container. It can be kept at room temperature for up to 3 days or refrigerated for up to a week.

The cake is too dry, what might have gone wrong?

If the cake turns out dry, it could be due to overmixing the batter or baking for too long. Make sure to mix just until combined and keep an eye on the baking time, testing with a toothpick to ensure it's not overbaked.

Recommended Drink Pairings

  • Coconut Water: Its natural sweetness and lightness complement the coconut in the cake.
  • Chardonnay: A lightly oaked Chardonnay enhances the cake's richness with its buttery notes.
  • Thai Iced Tea: The creamy texture and spiced flavor balance the sweetness of the cake.
  • Sparkling Water: The carbonation refreshes the palate between bites of the rich cake.
  • Vanilla Latte: The coffee's warmth and vanilla notes pair well with the cake's flavors.

Delish! The most moist cake ever! Admittedly I questioned the lack of salt so I added just 1/2 tsp. I had been looking for a new dessert recipe that wouldn't mess with my husband's blood sugar and this worked due to the fiber and protein. Thank you!

About 170°F, and you should use which ever milk you like best, it really doesn't matter.
