With all your ingredients and equipment gathered, you are ready to get started!

Directions

  1. Place all the liquid ingredients including the orange in a blender and blend well.
  2. Add the flours with the baking powder, sugar and coconut and mix well.
  3. Add to a cake pan previously greased with butter and sprinkled with flour.
  4. Bake at 180ºC or 350ºF for more or less 40 minutes (do the toothpick test).
  5. Garnish with grated coconut.

Recipe Tips

When blending the whole orange, ensure you blend it until completely smooth to avoid any large pieces in the cake. This will enhance the cake's texture and flavor distribution.
For added flavor, consider incorporating a teaspoon of vanilla extract or almond extract into the batter. This can complement the orange and coconut flavors beautifully.
A common mistake is overmixing the batter once the flour and cornstarch are added. Mix just until combined to ensure the cake remains light and fluffy, avoiding a dense texture.

Frequently Asked Questions

Can I substitute the whole orange with orange juice or zest?

Yes, you can substitute the whole orange with 1/2 cup of freshly squeezed orange juice and 1 tablespoon of orange zest. However, using the whole orange will give a more intense flavor and moisture to the cake.

How should I store the leftover orange and coconut cake?

Store the leftover cake in an airtight container at room temperature for up to 3 days. For longer storage, you can refrigerate it for up to a week or freeze the cake for up to 3 months. If freezing, wrap it tightly in plastic wrap and place it in a freezer-safe container.

My cake didn't rise properly; what could be the issue?

If your cake didn't rise, it might be due to using old baking powder or not mixing the ingredients well. Ensure that your baking powder is fresh and make sure to incorporate the dry ingredients uniformly into the wet ingredients. Also, avoid opening the oven while baking, as this can cause the cake to deflate.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and slightly effervescent wine complements the citrus notes of the cake beautifully.

General: Prosecco - The refreshing bubbles and fruity character of Prosecco enhance the sweetness of the orange and coconut flavors.

Beer

Portuguese: Super Bock - This lager is crisp and clean, providing a refreshing contrast to the rich flavors of the cake.

General: Hefeweizen - The banana and clove notes in a Hefeweizen pair well with the tropical coconut and orange elements of the dessert.

Other Beverages

Coconut Milk: This creamy beverage enhances the coconut flavor and adds a luscious texture to the dessert experience.

Vegetable oil or to taste, grated coconut will always be sweet, unless it says so.
