Amazing Strawberry and Yogurt Cake Recipe

This amazing strawberry and yogurt cake recipe (receita de bolo de morango e iogurte), is easy to prepare.

Ingredients

2 strawberry yogurts (8.6 oz each)4 eggs3 yogurt cups of sugar4 yogurt cups of all purpose flour3.5 oz of culinary chocolate, about 100gr)10 strawberries1 tablespoon of butter1 teaspoon of baking powder

With all your ingredients and equipment gathered, you are ready to get started!

Directions

  1. Preheat the oven to 180ºC or 350ºF.
  2. Separate the egg whites from egg yolks.
  3. Beat the egg whites until they are stiff.
  4. Beat the egg yolks with the sugar, add the yogurts to the egg yolks and beat some more.
  5. Then add the flour and baking powder, mix well and wrap the egg whites as well.
  6. Melt the chocolate with the butter in a double boiler or in the microwave.
  7. Grate the strawberries with the magic wand and add to the chocolate.
  8. Grease a cake pan, place the preparation without chocolate, and then the chocolate on top and wrap to make it marbled, like marble cake.
  9. Bake for 45 minutes. 
  10. Stick with a toothpick to see if it is cooked.

Ensure that the yogurt is at room temperature for better mixing. Cold yogurt can cause the batter to be lumpy and affect the rise of the cake.
When measuring the flour, spoon it into the measuring cup and level it off with a knife instead of scooping directly from the bag. This prevents the flour from being compacted and results in a lighter cake.
Avoid overmixing the batter once the flour is added. Mix just until combined to prevent the cake from becoming dense and chewy. A few lumps are okay!
