Directions
- Preheat the oven to 180°C or 350°F and grease a 9 inch springform pan.
- In a medium bowl, mix the graham cracker crumbs with the melted butter and press onto the bottom of springform pan.
- In a large bowl, mix the cream cheese with the sugar until smooth.
- Blend in the milk, and then mix in the eggs one at a time, mixing just enough to incorporate.
- Mix in the sour cream, vanilla and flour until smooth and pour the filling into the prepared crust/pan.
- Bake for 1 hour, turn the oven off, and let the cake cool in the oven with the door closed for 5 to 6 hours (this prevents it from cracking).
- Garnish with fresh strawberries and chill in the refrigerator until serving.
Recipe Tips
Frequently Asked Questions
Can I use a different type of crust instead of graham crackers?
Yes, you can substitute graham crackers with other types of cookies such as digestive biscuits, oreos, or gingersnaps for a different flavor. Just crush them finely and mix with melted butter before pressing into the pan.
How should I store leftover cheesecake?
Store any leftover cheesecake in an airtight container in the refrigerator for up to 5 days. You can also freeze it for longer storage; wrap it tightly in plastic wrap and then in aluminum foil for up to 2 months.
What should I do if my cheesecake cracks during baking?
To help prevent cracks, make sure not to overmix the batter and avoid incorporating too much air. If it does crack, you can cover it with a sour cream topping or fresh fruit to disguise the crack when serving.
