With all your ingredients and equipment gathered, you are ready to get started!

Directions

  1. Preheat the oven to 180°C or 350°F and grease a 9 inch springform pan.
  2. In a medium bowl, mix the graham cracker crumbs with the melted butter and press onto the bottom of springform pan.
  3. In a large bowl, mix the cream cheese with the sugar until smooth.
  4. Blend in the milk, and then mix in the eggs one at a time, mixing just enough to incorporate.
  5. Mix in the sour cream, vanilla and flour until smooth and pour the filling into the prepared crust/pan.
  6. Bake for 1 hour, turn the oven off, and let the cake cool in the oven with the door closed for 5 to 6 hours (this prevents it from cracking).
  7. Garnish with fresh strawberries and chill in the refrigerator until serving.

Recipe Tips

Ensure that the cream cheese is at room temperature before mixing; this will help achieve a smooth and creamy texture without lumps. To speed up the process, cut the cream cheese into small cubes and let it sit out for about 30 minutes.
When preparing the crust, press the crushed graham crackers and melted butter mixture firmly into the bottom of the pan and slightly up the sides for better structure. Use the bottom of a measuring cup to create an even surface and avoid cracking during baking.
Avoid overmixing the batter once the eggs are added, as this can incorporate too much air, leading to cracks in the cheesecake as it bakes. Mix just until the ingredients are combined and smooth.

Frequently Asked Questions

Can I use a different type of crust instead of graham crackers?

Yes, you can substitute graham crackers with other types of cookies such as digestive biscuits, oreos, or gingersnaps for a different flavor. Just crush them finely and mix with melted butter before pressing into the pan.

How should I store leftover cheesecake?

Store any leftover cheesecake in an airtight container in the refrigerator for up to 5 days. You can also freeze it for longer storage; wrap it tightly in plastic wrap and then in aluminum foil for up to 2 months.

What should I do if my cheesecake cracks during baking?

To help prevent cracks, make sure not to overmix the batter and avoid incorporating too much air. If it does crack, you can cover it with a sour cream topping or fresh fruit to disguise the crack when serving.
