Recipe Tips

Ensure that the butter is at room temperature before starting. This will help it cream more easily with the sugar, resulting in a lighter cake texture. If you're short on time, you can microwave the butter in short bursts (10 seconds) until soft but not melted.
When separating the eggs, be careful not to get any yolk in the whites. Even a small amount of yolk can prevent the egg whites from whipping up properly. Use separate bowls for the yolks and whites, and only transfer the whites to the mixing bowl after confirming they're free from yolk.
For added flavor and moisture, consider incorporating a teaspoon of vanilla extract or almond extract into the batter. Additionally, you can fold in some lemon zest or orange zest for a refreshing citrus note that complements the sweetness of the condensed milk.

Frequently Asked Questions

Can I substitute the condensed milk with another ingredient?

Yes, you can substitute condensed milk with evaporated milk plus sugar. For every cup of condensed milk, mix one cup of evaporated milk with 1/2 cup of sugar. However, this may alter the texture and sweetness of the cake slightly.

How should I store the leftovers of the Condensed Milk Cake?

To store leftover cake, wrap it tightly in plastic wrap or place it in an airtight container. You can keep it at room temperature for up to 3 days or refrigerate it for up to a week. For longer storage, consider freezing it for up to 3 months.

What should I do if my cake doesn't rise properly?

If your cake doesn't rise, it could be due to expired baking powder or not beating the egg whites sufficiently. Make sure your baking powder is fresh, and ensure that the egg whites are beaten until stiff peaks form before folding them into the batter gently.

Recommended Drink Pairings

Wine

Portuguese: Madeira Wine - This fortified wine offers rich, caramelized flavors that complement the sweetness of the condensed milk cake beautifully.

General: Moscato - The light, fruity sweetness of Moscato pairs perfectly with the cake's creamy texture and provides a refreshing contrast.

Beer

Portuguese: Super Bock - This lager has a balanced taste that won't overpower the cake, making it a great companion for dessert.

General: Wheat Beer - The light and citrusy notes of wheat beer enhance the cake's flavors without being too heavy.

Other Beverages

Coffee: A smooth, slightly sweet coffee balances the richness of the cake and enhances its comforting flavors.
