Recipe Tips

Make sure to zest the orange before juicing it; this prevents the zest from being difficult to handle and enhances the flavor of the cake with fresh citrus notes.
When whipping the cream, ensure it is cold and use a chilled bowl to achieve maximum volume and stability; this prevents the cream from deflating and keeps the cake moist and fluffy.
Avoid overmixing the batter once you combine the dry ingredients with the wet; overmixing can develop gluten, resulting in a dense cake instead of a light and airy texture.

Frequently Asked Questions

What can I substitute for the whipping cream in this recipe?

You can substitute the 35% whipping cream with an equal amount of full-fat coconut milk or Greek yogurt for a lighter option. If you need a dairy-free option, use coconut cream.

How should I store the Portuguese Orange Cream Cake after baking?

Store the cake in an airtight container at room temperature for up to 3 days. For longer storage, you can refrigerate it for up to a week or freeze it for up to 3 months. Make sure to wrap it tightly in plastic wrap before freezing.

What should I do if my cake doesn't rise or turns out dense?

If your cake doesn't rise or is dense, ensure that your baking powder is fresh and properly measured. Also, be careful not to over-mix the batter after adding the flour, as this can lead to a tough texture. Make sure your oven is preheated and at the correct temperature before baking.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and refreshing wine has floral notes and a hint of citrus that complements the orange flavors in the cake.

General: Prosecco - The bubbly, fruity profile of Prosecco enhances the cake's creaminess and adds a celebratory touch.

Beer

Portuguese: Super Bock - This crisp lager has a mild bitterness that balances the sweetness of the orange cream cake.

General: Lager - A light lager's refreshing qualities will cleanse the palate between bites of the rich cake.

Other Beverages

Espresso: A shot of espresso provides a rich and bold contrast to the sweetness of the cake, enhancing the overall flavor experience.
