Recipe Tips

Ensure that your Greek yogurt is at room temperature before mixing it with other ingredients. This helps to create a smoother batter and improves the overall texture of the cake.
When measuring flour, use the spoon and level method instead of scooping directly from the container. This prevents the flour from becoming compacted, which could lead to a denser cake. Use a spoon to fill your measuring cup and then level it off with a straight edge.
Avoid overmixing the batter once you add the dry ingredients. Overmixing can lead to a tougher cake. Mix just until the dry ingredients are incorporated, and you notice no dry patches.

Frequently Asked Questions

Can I substitute Greek yogurt with another type of yogurt?

Yes, you can substitute Greek yogurt with any unflavored yogurt, such as plain regular yogurt or dairy-free alternatives. However, note that the texture and moisture level of the cake may slightly vary.

How should I store the leftover cake?

To store leftover cake, wrap it tightly in plastic wrap or place it in an airtight container. It can be kept in the refrigerator for up to 5 days or in the freezer for up to 3 months.

What should I do if my cake doesn't rise properly?

If your cake doesn't rise properly, ensure that you're using fresh baking powder, as expired baking powder can affect the cake's rising ability. Also, make sure to beat the egg whites until they are stiff, and gently fold them into the batter to maintain airiness.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - The light, effervescent qualities of Vinho Verde complement the sweetness of the pineapple and yogurt beautifully.

General: Riesling - A semi-sweet Riesling enhances the tropical flavors of the cake while balancing the acidity of the yogurt.

Beer

Portuguese: Super Bock - This pale lager offers a crisp and refreshing taste that pairs well with the cake's sweet and fruity elements.

General: Wheat Beer - A light and fruity wheat beer, like Blue Moon, complements the cake's flavors with its citrus notes.

Other Beverages

Coffee: A lightly roasted coffee with hints of fruit can enhance the cake's sweetness and provide a nice contrast.
