Recipe Tips

When separating the egg whites from the yolks, ensure that no yolk gets into the whites, as even a small amount of fat can prevent the whites from whipping up properly. Use a clean, dry bowl for whipping the egg whites to achieve maximum volume.
For added flavor and moisture, consider sautéing the chopped apples in a bit of oil or butter with a sprinkle of cinnamon before adding them to the batter. This will enhance their sweetness and prevent them from sinking to the bottom of the cake.
Avoid overmixing the batter after adding the flour; gently fold the dry ingredients into the wet ingredients until just combined. Overmixing can result in a dense and tough cake texture. Aim for a few lumps in the batter for a light and airy cake.
