Recipe Tips

For a more flavorful pork loin, marinate the meat in the orange juice, white wine, salt, and spices for at least 2 hours or overnight before cooking. This will help the flavors penetrate the meat.
Avoid overcooking the pork loin by using a meat thermometer. Aim for an internal temperature of 145°F (63°C) for juicy, tender results. Let it rest for at least 10 minutes before slicing to retain moisture.
When searing the pork loin, ensure your pan is hot enough before adding the meat. A good sear will lock in the juices and create a delicious crust. If the meat sticks to the pan, it likely needs more time to sear.

You can substitute lard or vegetable shortening with butter or olive oil. If you want a healthier option, using a lighter olive oil can work as well, though it may slightly change the flavor.

How long can I store the leftovers of the pork loin?

Leftover tender pork loin can be stored in the refrigerator for up to 3-4 days. Make sure to keep it in an airtight container to maintain freshness. You can also freeze it for up to 3 months.

What should I do if the pork loin is not cooking evenly?

If you notice that the pork loin is not cooking evenly, try rearranging it in the baking dish or rotating it halfway through the cooking time. Additionally, ensure your oven is properly calibrated, as an oven thermometer can help check the accuracy of the temperature.
