Tips for Success

Avoid overcrowding the pan when searing the pork spare ribs. This ensures a good caramelization and prevents steaming, which keeps the ribs tender and flavorful.

For deeper flavor, marinate the pork ribs in a mixture of olive oil, garlic, paprika, and Piri-piri sauce for at least 2 hours (or overnight) before cooking. This allows the spices to penetrate the meat better.

When cooking the chickpeas, use dried ones instead of canned for a better texture. Soak them overnight and add them to the pot during the last hour of cooking to ensure they are perfectly tender without becoming mushy.

Frequently Asked Questions

What can I substitute for chickpeas in this delicious and tender farm-style ribs recipe?

If you don't have chickpeas, you can substitute them with white beans like cannellini or navy beans, or even lentils for a similar texture and flavor.

How should I store the leftovers of this dish?

Allow the dish to cool completely before transferring it to an airtight container. It can be stored in the refrigerator for up to 3 days or in the freezer for up to 3 months. When reheating, add a splash of water to prevent drying out.

The ribs are tough, what can I do to make them more tender while cooking?

To achieve more tender ribs, ensure you cook them at a lower temperature for a longer period of time, allowing the connective tissues to break down. You can also add a bit of vinegar or citrus juice to the cooking liquid, which helps to tenderize the meat.

Recommended Drink Pairings

  • Malbec: This red wine complements the richness of the pork ribs and enhances the smoky flavors of the dish.
  • Chardonnay: A full-bodied white wine that balances the spices and acidity from the tomatoes and peppers.
  • Ginger Ale: The sweetness and spice of ginger ale provide a refreshing contrast to the savory ribs.
  • Sparkling Water: Its effervescence cleanses the palate between bites, making it a great non-alcoholic choice.
  • Cold Brew Coffee: The bold flavors of cold brew can complement the savory elements of the dish, adding depth to the meal.
  • Mint Tea: The refreshing qualities of mint tea can help balance the richness of the ribs while providing a soothing finish.
