Tips for Success

When sautéing the onion and celery, allow them to cook until they are translucent and slightly caramelized for deeper flavor. This usually takes about 5-7 minutes on medium heat.

For added depth, consider incorporating spices like cumin or coriander along with the paprika. Start with 1/2 teaspoon and adjust according to your taste preference.

Avoid overcooking the lentils; they should be tender but not mushy. Check for doneness after 20 minutes of simmering, and adjust cooking time accordingly, especially if using different types of lentils.

Frequently Asked Questions

Can I use dried chickpeas instead of canned chickpeas in this recipe?

Yes, you can use dried chickpeas, but they need to be soaked overnight and boiled until soft before adding them to the soup. You may need to adjust the cooking time accordingly.

How should I store leftovers of the hearty lentil and chickpea soup?

Store any leftovers in an airtight container in the refrigerator for up to 5 days. You can also freeze the soup for up to 3 months. Thaw in the refrigerator before reheating.

What can I substitute for vegetable broth if I don’t have any on hand?

You can use water with added herbs and spices for flavor, or substitute with chicken broth if you’re not keeping it vegetarian. Adjust the salt accordingly since broths can vary in sodium content.

Going to try the lentil/chickpea soup as I love them both, I'm thinking I might add some shredded chicken or beef to it.

What ingredient are the small brown things in the soup in the photo of this recipe?

It's most likely the lentils which can get either brown or green. Don't use the tiny French lentils (eh puy) they'll totally disappear in this soup.

Hi Maria, I don't know, it could be the sauteed onion and garlic, we make this soup all the time but don't remember what that could be.

This was really good. I was going to follow it exactly, but after I started I used the whole can of diced tomatoes and the whole can of chickpeas. I don't think it took anything away from the original.
