Recipe Tips

When cooking the spiral pasta, make sure to add a generous amount of salt to the boiling water; this enhances the pasta's flavor and helps it to better absorb the sauce later.
To avoid a mushy texture, cook the mushrooms until they're nicely browned before adding the onions and garlic; this will elevate their flavor and prevent excess moisture from turning the dish soggy.
For a depth of flavor, consider adding a splash of white wine after the garlic is sautéed but before adding the tomato paste; allow it to reduce slightly before proceeding with the recipe.

How can I store leftover pasta with tuna?

Store any leftovers in an airtight container in the refrigerator for up to 3 days. When reheating, add a splash of cream or broth to help regain moisture.

You can use half-and-half, or for a dairy-free option, try coconut cream or a non-dairy milk combined with a bit of cornstarch to thicken.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and crisp white wine complements the richness of the tuna and cream, enhancing the dish's flavors without overpowering them.

General: Sauvignon Blanc - Its bright acidity and herbal notes pair well with both the spinach and the savory elements of the pasta dish.

Beer

Portuguese: Super Bock - This popular lager offers a refreshing balance that cuts through the creamy texture of the dish while enhancing its umami flavors.

General: Pale Ale - The hoppy bitterness of a pale ale complements the savory ingredients, providing a nice contrast to the richness of the cream and tuna.

Other Beverages

Green Tea: Its subtle earthiness and slight bitterness can cleanse the palate and provide a refreshing contrast to the creamy pasta.
