Ingredients

4 medium sized potatoes (approx. 800g / 1.7 lbs)1 onion, cut in fine half moons (approx. 150g / 5.3 oz)2 cloves of garlic, minced (approx. 10g / 0.35 oz)1/2 green pepper in strips (approx. 75g / 2.6 oz)1/2 red pepper in strips (approx. 75g / 2.6 oz)6 fresh white mushrooms, sliced (approx. 100g / 3.5 oz)4 eggsChopped fresh parsley (to taste)Salt and pepper (to taste)Olive oil (to taste)

Directions

  1. Peel the potatoes and cut them into sticks or cubes.
  2. Season with salt and fry them in olive oil until crispy, then set aside.
  3. Saute the onion and garlic in a large skillet, when the onion is transparent, add the mushrooms and peppers.
  4. Season with salt and pepper and let it sauté well.
  5. Add the fried potatoes, mix well and place the eggs on top.
  6. Season the eggs with a little salt and freshly ground pepper and cook until the egg is cooked, being careful not to overcook the yolk.
  7. Remove from the heat, sprinkle with chopped fresh parsley and serve.


Recipe Tips

To ensure your fries are crispy, soak the cut potatoes in cold water for at least 30 minutes before frying. This helps to remove excess starch, resulting in a better texture.
When frying the eggs, use a non-stick skillet and add a little olive oil or butter to prevent sticking. For perfectly cooked yolks, cover the skillet with a lid for the last minute of cooking to steam the tops without overcooking the yolks.
