With all your ingredients and equipment gathered, you are ready to get started!

Directions

  1. In a large non-stick frying pan, add olive oil and heat to medium high.
  2. In a bowl, add the eggs, salt and pepper and beat for a couple of minutes.
  3. Add the green onions and pepper paste to the eggs and stir until combined.
  4. Once the pan is hot, add the egg mixture and cook on medium heat until almost set and bottom has some colour. I like to run the spatula under the omelet as it cooks to prevent sticking.
  5. Slide the omelet onto a plate.
  6. Hold the pan over the plate then flip them both so that the uncooked side of the omelet is now on the bottom.
  7. Cook for several minutes.
  8. Serve with unpeeled potatoes boiled with garlic cloves, salt and hot pepper flakes.

Recipe Tips

For a fluffier omelette, whisk the eggs vigorously until they are fully aerated before cooking. You can also add a splash of milk or cream for extra richness.
When sautéing the green onions, do so over medium heat and for just 1-2 minutes until they are slightly softened. This enhances their flavor without losing their vibrant color.
Avoid overcooking the omelette; cook on low heat and gently shake the pan as it cooks to allow uncooked egg to flow to the edges. Remove from heat when the center is still slightly runny, as it will continue to cook off the heat.

Frequently Asked Questions

Can I substitute the green onions with another ingredient?

Yes, you can substitute green onions with chives, shallots, or even diced bell peppers for a different flavor profile. Just be sure to chop them finely for even cooking.

How should I store leftovers of the omelette?

Store any leftover omelette in an airtight container in the refrigerator for up to 3 days. To reheat, place it in a skillet over medium heat until warmed through, or microwave it for quick reheating.

What should I do if my omelette is sticking to the pan?

If your omelette is sticking, make sure you are using enough oil in the pan and that it's adequately heated before adding the egg mixture. You can also use a non-stick pan and run the spatula gently underneath the omelette as it cooks to help release it.
