Recipe Tips

When cooking the potatoes, ensure they are cooked until fork-tender before adding the other vegetables. This prevents undercooked potatoes in the final dish. Boil them for about 10-15 minutes before combining with other ingredients.
To enhance the flavor of the dish, sauté the chopped onion and red pepper in olive oil until they are soft and aromatic before adding the tomatoes and tomato paste. This builds a more complex flavor base.
Avoid overcooking the eggs by adding them to the pan last and cooking them until just set. This will give you a creamy texture and prevent them from becoming rubbery. Scramble or fry them gently over low heat.

Frequently Asked Questions

What can I substitute for chouriço sausage if I can't find it?

You can substitute chouriço sausage with other types of smoked sausages, such as Spanish chorizo, Kielbasa, or even pepperoni. For a vegetarian option, try using a plant-based sausage or simply omit it and increase the vegetables.

How should I store leftovers from this dish?

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven until heated through. For best texture, consider reheating in the oven.

What should I do if my eggs don’t seem to be cooking properly in the oven?

If the eggs aren’t cooking through after 20 minutes, you can cover the dish with aluminum foil to trap steam, which will help cook the eggs faster. Check for doneness at 5-minute intervals until they reach your desired level of doneness.
