Ingredients

1 smoked pork shank, 800 g (1.75 lbs)15 small potatoes, 500 g (1.1 lbs)30 ml (2 tbsp) olive oil10 cloves of garlic, chopped15 ml (1 tbsp) honey1 red bell pepper, 150 g (5.3 oz)5 g (1 tsp) chopped dry parsley120 ml (1/2 cup) white wine15 g (1 tbsp) coarse salt

Equipment:

1 pressure cooker1 saucepan1 baking safe pyrex dish1 tablespoon1 pastry brush1 clean cloth

With all your ingredients and equipment gathered, you are ready to get started!

Directions

  1. Cook the shank in a pressure cooker with water for 35 minutes and once done, drain the water.
  2. Cook the potatoes with the skin in a saucepan with salt and water until tender.
  3. When the potatoes are cooked, drain the water completely.
  4. Wrap the potatoes in a clean cloth, punch to smash them slightly, and arrange them in a baking safe Pyrex dish.
  5. Place the smoked pork shank directly in the center of the dish.
  6. Drizzle with 30 ml (2 tbsp) of olive oil, add the chopped garlic cloves over the potatoes alongside the parsley and chopped red bell pepper, then drizzle with 120 ml (1/2 cup) of white wine.
  7. Brush the pork shank with 15 ml (1 tbsp) of honey and roast at 180ºC (350ºF) for about 50 to 60 minutes.
  8. Occasionally use a tablespoon to pour the juices from the bottom of the Pyrex dish over the pork and potatoes while roasting.
