With all your ingredients and equipment gathered, you are ready to get started!

Directions

  1. Put the potatoes with the skin in a pan, cover with water, bring to a boil and cook until they are cooked, drain the potatoes and remove the skin.
  2. Heat a frying pan with a little olive oil and add the potatoes.
  3. Fry them until golden brown.
  4. Move the potatoes to one side of the pan, add a little more olive oil on the other side of the same frying pan, add the garlic there and let it brown, than add the rosemary, salt, pepper and mix the seasonings with the potatoes.

Recipe Tips

Ensure to parboil the small potatoes for about 10 minutes before frying. This will soften them and help achieve a crispy exterior while keeping the insides fluffy.
Add the minced garlic to the pan only after the potatoes have started to brown. Cooking garlic too early can cause it to burn and develop a bitter taste.
For an extra flavor boost, try adding a squeeze of fresh lemon juice or a sprinkle of grated Parmesan cheese just before serving to enhance the overall taste of the dish.

Frequently Asked Questions

What can I substitute for fresh rosemary in this recipe?

You can use dried rosemary as a substitute; just use about one teaspoon of dried rosemary for every tablespoon of fresh rosemary. Alternatively, you can try using thyme or oregano for a different flavor.

How can I store leftover garlic fried potatoes?

Allow the potatoes to cool completely, then store them in an airtight container in the refrigerator for up to 3 days. To reheat, you can pan-fry them again on low heat or heat them in the oven until warmed through.

My potatoes didn't get crispy when frying. What can I do differently next time?

Make sure to dry the boiled potatoes thoroughly before frying them; excess moisture can make them soggy. You can also try cutting them into smaller pieces or increasing the heat while frying to achieve a better crispiness.
