With all your ingredients and equipment gathered, you are ready to get started!

Directions

  1. Cook the potatoes with the peel in salt water.
  2. Once cooked, drain and give them a slight "punch" with the hand.
  3. Put the potatoes in a baking dish, drizzle them with olive oil and season with coarse salt, dry thyme and the garlic (crushed).
  4. Bake at 180ºC or 350ºF until crisp and golden.

Recipe Tips

For extra crispy potatoes, parboil the potatoes for about 10 minutes before roasting. This helps create a fluffy interior and a crisp exterior when roasted.
Mince the garlic instead of leaving it whole to infuse the potatoes with more flavor. However, be careful not to burn the garlic during roasting; consider adding it halfway through the roasting time to prevent bitterness.
Avoid overcrowding the baking sheet; ensure there is enough space between the potatoes to allow for even roasting. If necessary, use two baking sheets to achieve a perfect golden-brown finish.

Frequently Asked Questions

Can I use other types of potatoes for this recipe?

Yes, you can use other types of potatoes such as Yukon Gold or red potatoes. Each type will give a slightly different flavor and texture, but they will all work well for roasting.

How should I store leftover garlic roasted potatoes?

Store leftover roasted potatoes in an airtight container in the fridge for up to 3 days. To reheat, place them in the oven at 180ºC (350ºF) until warmed through and crispy again.

What can I substitute for dried thyme if I don't have it?

If you don't have dried thyme, you can substitute it with other herbs like rosemary or oregano. Fresh herbs can also be used, just remember to use about three times the amount as fresh herbs are less concentrated than dried.
