Ingredients

1 and 1/2 pounds of potatoes2 onions3 garlic cloves1/4 cup of olive oil1/2 pound of green beans2 tomatoes1 tablespoon of butter1 sprig of mint2 tablespoons olive oilSalt, pepper, mint and olive oil (to taste)

With all your ingredients and equipment gathered, you are ready to get started!

Directions

  1. Clean the beans and cut into pieces, cook the beans in water with a little salt,  drain the beans and put the broth aside.
  2. Peel the potatoes, onions and garlic, chop everything coarsely and saute in the olive oil.
  3. Add half of the reserved bean broth and cook for 20 minutes.
  4. Blend everything and season with salt and pepper.
  5. Remove the skins and seeds from the tomatoes, cut it into pieces and sauté with the butter along with a minced mint leaf.
  6. Add to the soup, as well as the beans.
  7. Serve it decorated with mint and a string of olive oil.

Recipe Tips

To enhance the flavor of the soup, sauté the onions and garlic in the olive oil until they are translucent before adding the potatoes. This will build a more complex base for your soup.
When blending the soup, allow it to cool slightly before using an immersion blender to avoid splattering. If using a traditional blender, blend in batches and fill the blender no more than halfway to prevent overflow.
To avoid a gritty texture, make sure to thoroughly wash the green beans and potatoes before cooking. Additionally, consider peeling the potatoes for a smoother soup, as the skins can add a bit of graininess.
